Summary
Amaranth consumption in Xochimilco, Mexico City, is primarily driven by its use as a snack and its regular taste, with limited awareness of its functional properties. Only 35% of consumers recognize amaranth's nutritional benefits, while higher income levels correlate with increased frequency and quantity of consumption. The study, conducted through non-probabilistic convenience sampling involving 135 participants from September to December 2015, used Pearson correlation analysis (SAS 9.3) to identify key factors. Findings suggest that individuals who are students or professionals represent a significant market niche for amaranth-based breakfast options or snacks. The research underscores the need for targeted strategies to promote amaranth consumption by emphasizing its functional attributes.
